Corn-Pineapple Relish

Relish/Salsa/Salad…the name doesn’t matter: TRY IT!

Ingredients:

2 Corn, fresh off of the cob

1/3 cup + Pineapple, finely diced

2 Scallions

1 Red pepper, small

Oregano, fresh, chopped

Salt and Pepper

1-2 tsp Red Wine Vinegar

1. Take corn off of the cob and add to a bowl with the chopped pineapple, scallions, and diced red pepper.

2. Add fresh oregano, vinegar, and salt and pepper to taste.

3. Mix to combine.

Serve on Gazpacho, on a taco, or enjoy on its own!

Ingredients:

Whole wheat tortilla, toasted

Lettuce

Avocado, ripe

Egg

Black bean salad, see below

Hot sauce

1. Fold tortilla in half and put in toaster.

2. Put black bean salad in pan and heat.

3. Crack egg into bowl then pour on top of black beans.

4. Cover pan to allow egg to cook.

5. Place lettuce and avocado on tortilla

6. Once egg is cooked to your liking, put black beans and egg on one half of the tortilla.

7. Spoon rest of heated beans on tortilla.

8. Add hot sauce.

9. Fold in half and eat!

Black Bean Salad:

Black beans

Red pepper

Corn

Cilantro

Lime

Olive Oil

Jalepeno

Red Onion

Salt and Pepper

1. Mix ingredients in bowl.

2. Eat!
