I’ll be honest. I kind of want cheese. Not a lot, just some. But that’s what makes it a vegan challenge! Good side effect is I’m not craving certain things as I normally would and I feel balanced inside.
Breakfast: Homemade granola. 2 oranges.
Snacks: Raw nut mix. Spiced flatbread.
Lunch @ Chinese food truck: Steamed veggies (mushroom, broccoli, cabbage, carrot) with brown rice and hot sauce. This is my go-to food truck meal. Always filling, never in a thick fatty sauce.
Dinner: Lentil vegetable soup. Spinach tomato lemon salad. Spiced flatbread with hummus and roasted peppers.
